Its gentle mouthfeel and layered sweetness make it a joy to drink across brew methods, especially as espresso or pour-over.\u003c\/p\u003e\n\u003cp class=\"coffee-summary\"\u003eLa Pastora comes from Don Miner’s family-run farm in Tarrazú, where everyone pitches in during harvest and processing.  Our team has visited this farm on multiple occasions and learned directly from Don Minor about his philosophies on processing. This particular lot uses the African washed method, a double soak process inspired by Kenyan techniques. After fermentation and the first wash, the beans are soaked again for 24 hours before drying.
